Clementine + Yuzu Margaritas

This could be my favourite drink of all time. These cocktails are zippy with lime and finish off with a sweet agave kick. I like it over ice, but for a slushy frozen version, blitz the lot with a couple of handfuls of ice in your blender. It can all be mixed in advance and poured over ice as needed. MAKES A DECENT JUGFUL

500ml clementine orange juice (about 8 clementines)

4 tablespoons of yuzu

lime juice (or the juice of 2 limes)

2 tablespoons agave syrup

100ml triple sec or cointreau

150ml good tequila

1 unwaxed lime, sliced


Put the clementine and lime juices into a jug, then add the agave syrup and the triple sec and tequila, and mix.

Fill four glasses with loads of ice and pour the margaritas over the ice. Finish with a slice of lime.
